Oatmeal for Dessert: Thin Mint edition

Thanks to the lovely folks at Bouldin Creek Cafe, I have discovered a new love for oatmeal, especially of the dessert variety because it can be healthy, filling, and fun.


Tonight I threw together an amazing concoction where I took some instant steel cut rolled oats (the healthy kind) and added to that some PB2, cinnamon, apples, and Thin Mints because it was sleeting outside and I bought 2 boxes of cookies from the poor Girl Scouts that were trying to sell in that weather.


Overall, delicious, then again the Thin Mint was the only thing you could taste, I will probably revisit this with less Thin Mint and more PB2 in the next few days.
