Ringing in a Healthy New Year :)

I know I posed last year about Southern Food Culture when it comes to New Years. I can’t help it, I’m not superstitious, but I do want upcoming years to be filled with health, wealth, and happiness. This year I made cornbread (it’s golden and gets you $), Brussels sprouts (to get me ahead), panko crusted fish (to swim in plenty), black eyed peas (for luck), and spinach (to keep my luck green). Because I’m prepping for a show, I didn’t have as much time as last year to make a feast, so the cornbread is from a pouch, the sprouts were steamed in the microwave, the fish was cooked in a pan and not the oven, and the black eyes and spinach were from a can, but it’s the thought that counts, right?

I don’t formally make full resolutions but one of my goals for the year is to eat more veggies, and I am off to a good start on that at least.
