Birthday/Housewarming/St. Patty’s Day Extravaganza

The boyfriend’s birthday is the 17th, but we decided to celebrate on the Fri and housewarm the new place with a celebratory pub night.
In typical me fashion, I put together an extensive menu which I am about to share.  Got 0 food complaints, lots of compliments and was pleased with the results.
First, I made Sheperd’s pie.  I love making it, and I think mine is pretty good.  I quickened the recipe to fit in the cooking time allotted.

4-5lb meat (I used Costco sirloin patties, but turkey is good, too.)
1 bag frozen peas (or peas and carrots)
1 bag frozen broccoli
1 bag frozen peas
1 bag pillsbury grands (or other biscuits)
1 box instant mashed potatoes
1 container Philadelphia whipped with chives
1 white onion
1 container mushrooms
1 bunch green onions
Beef bouillon (or better than bouillon)
Wheat flour
Parsley, sage, rosemary, celery, basil, other seasonings to taste.

Cook the meat in a skillet on med heatwith some of the onions, mushrooms, and season to taste, add water, a bit of weat flour to thicken, and bouillon to flavor.

Spray a cassarole with non-stick, stretch your buiscuits out along the cassarole to make a pasrty base layer. If you get frozen biscuits, you can microwave for 30 seconds to make them pliable.

Add your frozen veggies in quantities you like.

Chop mushrooms and onion and add them, too.

Slap in your meat.

Warm the philly whipped for 20 seconds in the microwave. Add to liberal amound potato flakes, add water to desired consistency.  Slather on top everything else in the cassarole.

Season as desired.

Cut green onions, place on top.  Decoratively if desired.

Cook at 350 for 20-40 mins, you will know it’s done when the biscuits are cooked.


When cooked, it turns golden brown.


Guinness Mac and Cheese
1lb kerrygold dubliner
1lb kerrygold irish select reserve (or other sharp cheddar)
.5 pint half and half or heavy cream
Wheat flour
1 bottle guinness
1 tub butter (I used smart balance)
1 container bread crumbs/panko
1 box whole wheat pasta

Take about 2 cups wheat flour, and 2 tbs butter and slap in skillet on med heat, cook until brown.  Drop to low heat.
Add cream in small increments and small chunks or grated cheeses, stirring every few minutes.  Add between 1/3 and 1/2 guinness to taste.  Simmer.

Boil water, add pasta, cooks in 6 mins.

In a cassarole pour cheesey goodness over strained pasta.  Add breadcrumbs, season to taste.

Bake for 10 minutes at 350.


Irish Bangers
Grab some decent beef sausage( I grabbed authentic bangers fromCostco)
Wheat flour (or corn starch)
Parsley, thyme, rosemary, celery

In a skillet, take 4-6 cups water, 2tbs butter, 2 cups flour, mushrooms, onion, and bouillon to taste, cook on med heat until onions are soft.

Add bangers.  Cook on med heat for 10-20 minutes.




This wasn’t everything, but the rest (panko crusted cod, green beans with garlic and onions, brownies, mashed potatoes) were simple off the box kinda affairs.

My frosted brownie cupcakes with irish shortbread shamrocks turned out great thanks to the net published Betty Crocker cupcake brownie recipe.  I used whipped frosting and green food coloring and bought some O’Neils shortbread on sale at Marshall’s. 


As a bonus scads of people came, brought all kinds of beer, and fun was had by all. A fabulous feast, festivity, and full of friends.
